Beehiver Spotlight – Ross Willis and his Famous Pumpkin Scones

Last week, Beehive was lucky to taste Ross Willis’ prize winning pumpkin scones for morning tea.  These scones are a family recipe that have been made and shown at the Royal Easter Show for over 20 years. 

This recipe has won several awards over the years.  This year, Ross and his family (his sister and his son), won three family trifectas at the Royal Easter Show including:

  • 1st, 2nd and 3rd in the Pumpkin Scones category;
  • 1st, 2nd and 3rd in the Sultana Scones category; and
  • 1st, 2nd and 3rd in the Coconut Macaroons category


Ross learned to bake as a child and started competing in the Easter Show at the age of 14.  He has been carrying on the family tradition and has passed it down to his own children. 

While we are unable to share Ross’ prize-winning recipe, we can assure you of its incredible flavour.  Pumpkin scones are a uniquely Australian delicacy, a twist on scones from Scotland.  Ross says that pumpkin scones are “the pinnacle of Aussie cuisine”.  They are subtly sweet and do not need any jam or cream to enhance its flavour.
